Today I recommend you try this really tasty and healthy salad, which you can prepare ahead and why not, take it with you for lunch at work. If you want a more consistent meal, serve the salad with rice or bread with crispy crust. And now my mind flew directly to a picture of fresh baked bread,served with some butter and cherry jam, just divine…But we will continue the story with the bread another time, until then I will let you enjoy this salad, that I liked very much.
White bean salad with tuna and red onion (2 servings)
- 1 can (250g) of white beans
- 1 big red onion
- 1 tuna can in vegetable oil (200g)
- 200g of cherry tomatoes
- 1/4 cup of fresh chopped parsley
- 1 tablespoon of olive oil
- juice from half a lemon
In a bowl mix the beans with the thinly sliced red onion, the cherry tomatoes cut in half, the chopped parsley and the tuna, drained of oil. Season with salt and pepper, then add olive oil and the lemon juice. Stir well and serve. Enjoy!
